I've always heard about the lemon-law, but I've never been able to figure out exactly what the legal definition is, and how one might go about getting a dealership to buy their car back under this law. Anyone?

It is different in every state. In most cases the dealership is not directly involved, it is the manufacturer who does the buy back and the dealer simply handles the transaction. In your case the chances are slim to none of getting a buy back due to mileage. Ask for a trade assist based on your loyalty, you may have a better outcome. In a trade assist, the dealer puts a true wholesale value on your vehicle, and the factory chips in to make the deal more attractive. All laws involving lemon law buybacks are State made, Federal law only deals with emissions and safety.
